EA grew up in the dining rooms of South Louisiana, in a family restaurant tradition, and learned early that hospitality is performance with heart — presence, language, and care for a stranger.
He is a U.S. Navy veteran, honorably discharged, and has served on the floor at Lizzie’s on Main in New Iberia since the restaurant opened in July 2025, demonstrating LHP in real time.
The program is built for every kind of table, from a hot dog stand to fine dining. The standard does not change with the price of the menu.
Nicholls professionalized the kitchen. Louisiana still needs an institute for the table.
The long aim is the Louisiana Hospitality Institute — beginning with courses, not a building.
